Today I will share a tasty omelette recipe of mine. Why I like this omelet so much, is that it is really helpful for the people like me, who are very lazy to cook for long time. When you come home from your university or from workplace, you are too tired to cook something and you just want to eat because you are starving, the best thing you can do is to make something quick and tasty at the same time, which will provide you with enough energy you need. This omelette has no clear origin, but it is amazing that I know how to make it, and I make it quite often because of lack of time and my desire to eat.

So what are the ingredients of this amazing zucchini omelette?

  • 2 zucchini
  • 3 eggs
  • 2 small tomatoes 
  • Parsley
  • 2 small onions or 1 large onion
  • Olive oil or any kind of vegetable oil
  • 2 pinch of salt
  • Cheese( you can choose the kind you like)

As you can see the ingredients are not many in number which will make things easier for you to make the tastiest omelet ever probably.

So at first you need to clean and wash the zucchini and cut them into cubes. Next it is the time for tomatoes. In reality the use of tomatoes is completely up to you, if you do not like tomatoes you can avoid using them. As for me, they make the omelette  tastier and richer. So you take the tomatoes, wash them and cut into half-rounds. After this you should unpeel the onions and cut them into small cubes. Then you wash carefully the parsley and chop them in really small way. 

Once you have done all of this, it is the time to put the fire on. You add the olive oil or the vegetable oil under the medium heat, add the onions first and then fry them until they get golden color. After this step you add the tomatoes to the onions and fry for one minute tomatoes and onions together. After this you add the chopped zucchini, and fry all the ingredients you have until the zucchini is almost fully cooked. Then break 3 eggs in separate deep place, beat them and add to the pan full of the zucchini. You have to cook the omelet for about 5 minutes and flip it into the other side as well. 

Then, once the omelette is ready and the egg is not raw, you have to turn off the fire and add the chopped parsley and thin slices of cheese above, so that it can melt.

As you see, it is a super easy omelette to make, that probably anyone is able to make. You do not even need a big budget to make this stunning omelet. It will take you about 20 minutes to make and at the same time will provide you with the energy you need as the nutrition level is not law at all. Due to the eggs and vegetables, the nutrition is of medium level.

We highly recommend you to make this omelette  if you are really lazy and tired to cook something for long but when you do not want to be starving.
