Today we are making a very tasty soup, which is made of mushrooms mostly. The origin of this soup is not really clear, but what we can tell for sure is that you will not regret making this soup. It is light and it has a rich taste. This soup can be brilliant for you if you do not eat meat. As we know meet is necessary for our body function and it provides the protein we need. However, if you do not eat meat, the mushroom can replace it. This salad is fresh and actually is one of the rarest soups that you can eat both in summer and winter. Actually most of the soups are made in cold seasons in order to provide your organism with some liquid hot food, but this is not the case with this soup as it is tasty when being cold as well. So let’s find out what kind of ingredients we should have in order to make this stunning soup.
- Unsalted butter, ¼ cups
- 1 pinch of salt
- All-purpose flour, approximately 2 tablespoons
- 2 garlics, peeled beforehand
- 1 cup of water
- 1 pinch of salt
- Pepper up to the taste
- 2 pounds of fresh and clean mushrooms
- 1 yellow onion
- 6-7 springs of new and fresh thyme
- 4 cups of chicken broth (this is optional)
- 1 cup of heavy cream, whipping
- Fresh thyme leaves for garnish, up to your personal taste
Take a pan, add some oil there and let the pan get hot. Then wash and clean the mushrooms and add into the pan. Cook the mushrooms with butter and add 1 pinch of salt to it, mix and cook until the mushrooms give juice. Then reduce the heat and stir constantly until the mushrooms get rid of juice and turn nice golden color. Take a few mushrooms out of pan and keep it for garnish, add the onion to the rest of mushrooms and when getting soft, add the flour and stir well for a few minutes. After that add the thyme, chicken broth and then water, and continue to cook. Bring the mixture to simmer and cook for one hour and so.
Next add the mixture of mushrooms into blender and blend there until the mass gets really smooth.
Return the mushroom thick mixture from blender to pan and stir in cream. After that you should taste and see if everything is in the place. Add salt and pepper combined with garnish of mushrooms you set aside and with thyme.
As you can already imagine this soup is super rich in flavors. It is organic, tasty and at the same time very healthy. It will not take you too long to make this stunning soup. One and a half hour will be quite enough. Two hours is the maximum you will need. Then when it comes to nutrition, we have to note that it is quite high, because of mushrooms and the cooking level is also very easy.
