Settlers of early British American colonies did not have the essential ingredients and cooking equipment needed for making traditional suet puddings. This led to the invention of Cobblers, a dish where stewed fruit filling was covered with a layer of uncooked biscuits or dumplings. 

The first published recipe for Blueberry buckle dates back to the late 1950s. It appeared in the Blueberry Hill Cookbook by Elsie Masterton. According to popular belief, the recipe was named Blueberry buckle due to the buckled look of the dish’s streusel topping when it gets baked.

Making a Blueberry buckle is quite easy. We bring to you a simple recipe for baking this awesome cake sprinkled with plump and juicy blueberries.

Ingredients

  • Butter: 1/4 cup (softened)
  • Sugar: 3/4 cup 
  • Egg: 1
  • All-purpose flour: 2 cups
  • Baking powder: 2 teaspoons
  • Salt: 1/4 teaspoon 
  • Milk: 1/2 cup 
  • Fresh blueberries: 2 cups 

Note: If you are using frozen blueberries for the recipe, thaw them on a paper towel before using them

For Topping

  • Sugar: 2/3 cup 
  • All-purpose flour: 1/2 cup 
  • Cinnamon: 1/2 teaspoon (ground) 
  • Butter: 1/3 cup (chilled and cubed)

Protein: 8 g

Directions

  • Take a square baking pan of about 9-inch size and grease it. Keep it aside.
  • In a small bowl beat the sugar and butter until the mixture turns light and fluffy.
  • Add egg to this mixture and beat well.
  • In another bowl mix flour, salt, and baking powder. 
  • Add the flour mixture to the sugar mixture, alternately with milk. Beat well after each addition to make a smooth batter.
  • Add blueberries to the batter. Gently stir the berries into the batter.
  • Pour this cake batter into the greased baking pan.
  • For topping: In a small bowl, combine flour, cinnamon, and sugar. Add butter to this combination. Continue to mix the ingredients with a fork till the mixture attains a crumb-like texture. Sprinkle the topping mixture over the cake batter.
  • Bake at 375° for 40-45 minutes. Insert a toothpick in the center of the pan to test if the baking is done. The toothpick will come out clean when the cake gets baked.
  • Take out the cake from the oven and allow to cool.
