3 ounces of onions chopped
3 ounces thick bacons
1 and ½ pounds of stewing beef

1 bouquet garni, which is (1 bay leaf, 3 springs of fresh thyme, 3 springs od parsley tied together)

The making
Take a heavy pan, put under the medium heat and heat the oil. Then add the onions and the bacon, and cook properly by constantly stirring. The bacon must be cooked, so make sure it is not raw and has nice brown color. Remove it from fire and set aside. Next thing you need to do, is adding the beef and making it turn brown on all the sides.
After you have done this also, then take the beef, sprinkle it with flour, stir them until brown and finally add the stock. Then again stir, add the kept onions and bacon, the bouquet garni and wine. After that season it with pepper.
Once you have all these actions it is the time to simmer very gently for like 2 hours.
Then add mushrooms and cook for 30 minutes more. Finally season it with salt and serve.
