THE PUNJABI CURRY: SARSO KA SAAG

Introduction: I went to this very famous restaurant in Bangalore, India recently called Horn Ok Please. It usually serves Punjabi food but also has one or two south Indian dishes. What is fascinating about this place is the names of the dishes, how creative it is. So, what attracted me the most was this dish Sarso ka suhaag raat. When I called the waiter and enquired about it he mentioned its non-other than Punjabi Sarso Ka Saag served with makki di roti ( flat indian bread made with corn meal flour, corn meal is very commonly grown in Punjab and so is sarso, Sarso is nothing but mustard). Saag is nothing but when any leafy vegetable is cooked well and blended into a paste along with some spices. I have already written about palak paneer one of the types of saag. Today i will be writing about saag from from mustard leaves.

Sarso Ka Saag:

Preparation time: 15 minutes

Serves: 2 people

Ingredients required:

One medium sized onion finely chopped

One inch garlic finely chopped

Five to six cloves of garlic minced

Four green chilly finely chopped

One table spoon mustard oil

Four branch Fresh mustard leaves

One Branch fresh baby spinach leaves

Salt to taste

How to make sarso ka saag:

Take a pan add one table spoon of mustard oil. Once hot add one medium sized finely chopped onion, one inch ginger finely chopped, four green chilly finely chopped, five to six cloves of garlic minced. Cook for 30 seconds until golden brown.

Add washed and cleaned mustard leaves and spinach leaves. Mix well with the spices and Cover the pan with a vessel. Cook until it turns dark green and is fully cooked.

Once done blend this into fine paste and cook for another 30 seconds and serve hot.

Conclusion:

Sarso Ka Saag is ready to be served hot. This goes best with makki di roti. It can also be served with steamed rice and with any kind of Indian bread. Since it has a lot of greens it has a lot of nutritional benefits. It contains 58.8 grams of proteins and 57.8 grams of carbohydrates. Hope you like this dish and try at home.
