The Italian cuisine is definitely one of the cuisines that everyone knows about. We all love pizza, spaghetti and other stunningly tasty dishes that have Italian background. This time we will be making an Italian dish which is less popular than pizza or spaghetti, but honestly, the one which can compare with these dishes for sure. The dish is called caponata. It is a sort of salad, but it is much more effective when you are really hungry than just an ordinary salad.
So here is the list of necessary ingredients.

2 tablespoon of salt
3 chopped small onions
2 stalks of celery
½ cup of green and black olives
¼ cup of chopped fresh parsley
Salt and pepper
3 medium-sized eggplants
1/3 cup of olive oil
3 cloves of garlic
1 can of chopped tomatoes
¼ cup of capers
¼ cup of vinegar

So we have got quite a long list of ingredients. So let’s see how we can make the Italian caponata.
At first you need to wash the eggplants and then cut the eggplants into small pieces. Put in a dish, sprinkle with salt and set aside for about 20 minutes.
Then take a large pan, add olive oil and preheat the oven. Once the pan is hot enough, add the onions and let it turn soft. Then you should add the garlic and celery and cook more 5 minutes. Once all these are done, wash the tomatoes, cut them into pieces and add to the mass you have. Cook for about 10 minutes. The mass should get thick. Then turn the fire off and set this mass aside.
Take another pan, add olive oil, preheat the pan and add the eggplants there. Once they are golden on both side turn the fire off. Then add the eggplants into the tomato mass and cook all together for 15 minutes more. After 15 minutes turn the fire off and season the dish up to your taste.
Actually the dish is served on toast bread. You just need to have toast bread and slice the mass over the bread. If served on toast bread, this will make a perfect breakfast option.
As you see this is a really interesting Italian dish, which has all the Italian hot vibes in it. It is full of vegetables, tasty and at the same time unique. The nutrition of the dish is medium. We have many vegetables here, but because of frying and cooking them a lot, they lose some healthy staff. The timing is about 1 hour and the difficulty is not really high. It is quite easy and quick as well. So this one is just perfect if you are tired after work and you do not want to do too much complicated things.
