To make this dish we need to have
2 large or 3 medium eggplants
3 eggs
All-purpose flour ½ cups
Olive oil of ½ cups
As we have to fill the eggplants, therefore we need to have a filling as well.
So for the filling we need to have
Mozzarella, 3/4 cups, shredded beforehand
Pecorino Romano cheese, 1/3 cups, grated beforehand
Ricotta cheese of 1 cup
1 egg
So for the very first period we have to cut the eggplants into slices of ½ inch. Then add salt on them all of the slices. Put the slices into a plate and let them rest for 20-30 minutes. Then you have to take the flour you have and place it into a plastic bag.
Take a bowl, beat the eggs there and add one tablespoon of water. Take a heavy frying pan, add some oil there, until it will get a medium heat.
First sink the slices of eggplants into the flour, then into the egg, and then fry it on both side, so as the both sides will turn golden or red color. Continue the same action with all the slices.
Then take another bowl and add all the ingredients and mix together. Take a slice of eggplant and add some of the filling there and then do it to the rest of eggplants. Bake the eggplants for about 5 minutes and they are ready.
As you can see, this is a super homey dish which will make you full very early. The nutrition is medium, the timing is about one hour and at the same time it is easy to make. So it seems that this is a perfect dish for supper. Fried eggplants are usually very tasty themselves, and when you add an amazing filling made of cheese, that makes thing even better.
