4 slices of bacon
1 onion
2 each costena, pasillo, chipotle dried chilies, guajillo
1 Poblano chopped chili
5 garlic cloves, which must be minced
28 ounces San Marzano tomatoes (can be ordinary)
2 pounds of fresh October beans
Vegetable broth
1 teaspoon of chili powder
½ teaspoon of paprika
Springs of fresh oregano
1 teaspoon of cumin
A few shakes of liquid Maggi
1-2 tablespoon of mayonnaise

The making
You have to first of all place the dried chilies in a hot iron and cook until they have nice small. Add water and cover them, until they get soft. This can be approximately after 30 minutes. Then when they are soft, remove the seeds and the stem and immerse into the blender. Blend them properly and add some liquid if you feel there is need for that.
Then take a large pot, place bacon strips there and heat until under medium fire. The fat from bacon must be gone and the meat must become crispy. When it is so, remove the bacon, place them on paper towel to drain. Take under medium heat sauté the onions and then the Poblano until the onions get translucent. Then add the garlic into the onions and stir for a minute more. Add all the rest of ingredients including beans and all the rest. Bring the mass to boil, unless the beans are tender. Make sure the beans are cooked and that all the ingredients come well together. The cooking process will take about 2 hours. Then, when you are about to remove the mass from heat, add the salt and pepper and add the mayonnaise and the rye whiskey.
