Have you heard much about Filipino cuisine? I think the answer would most probably be negative. When you hear the name “Filipino cuisine” the first thing that comes to your mind is probably fish and rice. That is natural because Filipino cuisine is not much talked about, however, it is an interesting cuisine, which combines Asian cuisine roots influenced by Chinese reserved cuisine with the modern Philippine vibes. The Filipino cuisine also combines the sweet, sour and salty a lot. So we think that Filipino cuisine definitely is worthy our attention. 

Today we will introduce you a Filipino dessert. The dessert is the least thing you would think can be Filipino but it is really a part of Filipino cuisine. We are talking about Chocolate espresso cookies. 

All we need for this Philippine yummy dessert is

The ingredients

1 cup of butter

1/3 cup of sugar

1 and ¼ cups of brown sugar

1 teaspoon of vanilla extract

2 eggs

2 cups of all-purpose flour

1 teaspoon of baking soda

1 teaspoon of salt

3 tablespoon of ground espresso beans

16 ounces of semisweet chocolate chips

The making

To make this stunning dessert you firstly need to cut the butter into cubes and then add sugar on it. Then you have to add the eggs until they are well mixed together and after that add the vanilla extract. 

Take another bowl and add the all-purpose flour, salt, the baking soda and ground espresso together and then finally mix them. Then little by little add the flour mass into the butter mass and then stir in the semisweet chocolate chips.

Take an airtight container and place the dough in it. Leave it to chill overnight or at least one hour before baking in the refrigerator.

Then once it is chilled, preheat the oven 375 degrees and take the dough out of the refrigerator for 20 minutes to come to normal room temperature. 

Then take a spoon and shape a small round cookie shape by hands and by the help of spoon and then place on the baking sheet.  The baking is not time taking. It will take just 10 or 15 minutes to have them baked. They should become golden on edges and soft in the middle.

As you can see this is an amazing cookie which is absolutely perfect for breakfast. The cookie is especially tasty while drinking espresso, and that is why it is called espresso, not only because of the color, but also because it is eaten usually while drinking coffee.

So we would say this would be brilliant choice if you are to go work on early morning. You will have a espresso coffee with the espresso Philippine cookies and they will help your mood and give the positive vibes for the whole day. 

The cool thing about the cookies is that they are easy to make. The timing can be up to 2 hours, because you have to leave them in the refrigerator for like 1 hour. The nutrition is not high, because it is a cookie, and actually unhealthy food, but still it is a good mood provider, and that is why we love it.
