Colombian cuisine is all about diversity, weirdness and hot dishes. The Colombian cuisine expresses all the Caribbean shoreline food traditions. However the cooking habits and traditions of Colombia vary from region to region, so this means that you can find an unbelievable amount of diversity. The Colombian cuisine is also a lot influenced by Spanish, African and Arab cuisines. 

So let’s dive in into the Colombian cuisine and find out what makes it so special and weird, hot and weird. Colombian cuisine is definitely all about good food and family meetings.

So today we are going to introduce a Colombian October bean chili. I am sure the name is already enchanting.

So what do we need for Colombian October bean chili?

The ingredients

4 slices of bacon

1 onion

2 each costena, pasillo, chipotle dried chilies, guajillo

1 Poblano chopped chili

5 garlic cloves, which must be minced

28 ounces San Marzano tomatoes (can be ordinary)

2 pounds of fresh October beans

Vegetable broth 

1 teaspoon of chili powder

½ teaspoon of paprika

Springs of fresh oregano

1 teaspoon of cumin

A few shakes of liquid Maggi

1-2 tablespoon of mayonnaise

Salt and pepper, up to your taste

A glug or rye whiskey 

See how hot is this dish going to be? So many different ingredients. So let’s start making it.

The making

You have to first of all place the dried chilies in a hot iron and cook until they have nice small. Add water and cover them, until they get soft. This can be approximately after 30 minutes. Then when they are soft, remove the seeds and the stem and immerse into the blender. Blend them properly and add some liquid if you feel there is need for that. 

Then take a large pot, place bacon strips there and heat until under medium fire. The fat from bacon must be gone and the meat must become crispy. When it is so, remove the bacon, place them on paper towel to drain.  Take under medium heat sauté the onions and then the Poblano until the onions get translucent. Then add the garlic into the onions and stir for a minute more. Add all the rest of ingredients including beans and all the rest. Bring the mass to boil, unless the beans are tender. Make sure the beans are cooked and that all the ingredients come well together. The cooking process will take about 2 hours. Then, when you are about to remove the mass from heat, add the salt and pepper and add the mayonnaise and the rye whiskey. 

The amazing this is ready. Plate it in a nice round plate and serve hot. 

As you can see we have many different ingredients in this dish. The dish is super homey and all about good food. So the nutrition is really high, you can eat this and nothing else for the rest of the day. The making process is a little bit complicated because of so many ingredients and the bacon and beans. The timing is about 3 hours.
