Ingredients
- Dark chocolate: 200g (coarsely chopped)
- Snickers bars: 4 x 50g (chopped)
- Self-raising flour: 2 cups
- Eggs: 6
- Water: 2 cups
- Butter: 250g (softened)
- Brown sugar: 2-1/2 cups
- Double cream: 300ml
- Thickened cream: 600ml
- Cocoa powder: 1/2 cup
- Almond meal: 1 cup
- Roasted peanuts: 1/4 cup (coarsely chopped)
For Caramel sauce
- Caster sugar: 1/2 cup
- Thickened cream: 1/2 cup
For Whipped chocolate ganache
- Milk chocolate: 250g (chopped)
- Thickened cream: 1/2 cup
Directions
- Preheat oven to 160°.
- Grease two 20 cm round baking pans and line them with baking paper. Keep aside.
- In a saucepan combine chocolate and water. Melt over low heat till the mixture turns smooth. Set aside.
- Beat the sugar and butter in a bowl until light and fluffy.
- Add eggs to it, one at a time. Beat well after each addition.
- In another bowl mix flour, cocoa, and almond meal.
- Add the flour mixture to the sugar mixture, alternately with the chocolate mixture. Stir until just combined after each addition.
- Pour into the two greased pans evenly.
- Bake for 1 hour and 20-25 min or until a toothpick inserted into the centers comes out clean.
- Take out from the oven. Allow to cool.
- For Caramel Sauce: Take sugar in a saucepan and place over medium flame. Stir until the sugar gets dissolved. Remove from heat and add cream to it. Place on heat and cook till the sauce boils and becomes thick. Allow to cool.
- For Chocolate ganache: Melt cream and chocolate in a double boiler. Stir until smooth. Cover the melted mixture with plastic wrap and put in the fridge for an hour or until firm. Beat until creamy and smooth.
- Beat the thickened cream and the double cream until firm peaks form. Slowly fold in 1/4 cup of the caramel sauce to get a marbled effect.
- Using a large knife divide each cake horizontally in half.
- Place one layer of cake on a plate and spread 1/3 portion of the cream mixture on top of it. Place the next layer on it and spread the cream mixture. Repeat with the next layer. Finally, place the last layer. Spread the ganache on top of it.
- Sprinkle Snickers pieces and roasted peanuts over the ganache and drizzle the remaining caramel sauce.
